as you may have guessed from the title, i have been doing experiments in the kitchen again. but here's the twist:
chickpeas! (so exciting, I know)
as some of you may know, I am on a journey to find the most useful crops to start growing on my farm. recently, I have seen chickpeas included in SO many recipes, the only logical next step was to get in the field to see for myself how these recipes held up to the hype.
so i started with a pound of dry chickpeas. they soaked overnight and went into the crockpot the next morning.
i’m ngl y’all... if pancakes could fart, that’s exactly what chickpeas smell like while they’re cooking. tragic, but true.
i made the aquafaba first because it was the easiest. it’s just the water from the boiled chickpeas. aquafaba is a word i didn’t know a few weeks ago, but now i kinda love it. there are endless possibilities with the stuff, and i have big ideas brewing.
after separating the beans from the liquid, i threw them in a blender with more water and strained out what became “milk.”
the milk took forever to make and honestly... it didn’t even taste good. but the leftover pulp became granola, and it actually turned out really good, if i do say so myself. (chickpeas are packed with hella protein so all of these recipes are gymbro friendly.)
next i did the mayo, and omg. hands down the best thing i’ve made in this little experiment so far. it tastes so close to real mayo, i never would’ve guessed it came from garbanzo beans.
so yeah, that’s everything i’ve made so far with just one pound of chickpeas. they gave me more than i expected. one ingredient turned into so many things, and each found their own place. (the milk ended up down the sink bc it spoiled before i found a real use for it. it smelled so gross, i don't know if its worth keeping in the next batch.)
anyways, thanks for coming to my ted talk about chickpeas. and if you have any recipe recs or experiments i should try, drop them. i’ve got nine more pounds of beans to play with :)
