chickpea milk

 Ingredients:

  • boiled chickpeas (1 pound dry)

  • water

  •  sugar (i used brown)

  • cornstarch (for thickness, optional)

Instructions:

  1. after boiling your chickpeas, separate them from the aquafaba.

  2. place the boiled chickpeas in a blender and add water to cover. Blend until smooth.

  3. strain the blended mixture to separate the liquid from the pulp.

  4. pour the strained liquid into a pot and heat over medium.

  5. add sugar and cornstarch to taste, stirring constantly until slightly thickened.

PSA: if you make this and it actually tastes good, please share the recipe with me! i got ≈9oz of milk from the pulp and used ≈ 3/4 cup of brown sugar and it still tasted like chickpea water ¯\\(ツ)/¯
