Ingredients:

chickpea pulp

rolled oats

sugar (i used brown )

oil (any neutral oil works)
Instructions:

boil one pound of chickpeas, strain and blend them with water. Strain until the mixture has the consistency of mashed potatoes.

on an oiled baking sheet, mix together the chickpea pulp, oats, sugar, and oil. (use gloves if the texture bothers you. i didn’t, but i get it.)

Pro tip: add the sugar to the oil instead of the pulp if you want the brown sugar flavor to really stand out. i added it to the pulp, which masked the chickpea flavor, so a win is a win i guess.

spread the mixture evenly on the baking sheet and bake at 375°F for about 35 minutes.

let it cool a bit, then check the texture. If some parts are still soft, mix them around and bake for another 15–20 minutes.

let it cool completely. i think i left mine for about 3 hours (maybe forgot about it, but potato, tomato). then enjoy :)
