Chickpea Mayo

 

Ingredients:

  • aquafaba: ¾ cup (from boiled chickpeas)

  • oil: 2 ½ cups (neutral, like sunflower or canola)

  •  vinegar: 2–3 teaspoons (you can also use lemon juice)

  • salt: ½ teaspoon (adjust to taste)

  1. take aquafaba, put it in the blender with vinegar

  2. slowly drizzle in the oil while blending, just like making traditional mayo. the mixture will thicken and become smooth. (i think mine took 3-5 mins)

  3. season with salt and taste. adjust as needed.

  4. blend until it reaches a creamy, spreadable consistency.
